FIELD: technology of making of sparkling wines. SUBSTANCE: section of pipe-line through which fermentative mixture passes is flattened to neutralize optical properties of liquid. Particles shut off light flux in passing through liquid in focus and create pulses registered by photodiode. Pulses are converted to voltage needed for control of regulator regulating feed of yeast solution to fermentation mixture. In case of conglomerate passing regulator operates decreasing feed of yeast cells to solution. Counters cleaned by means of electromagnet are provided to keep needed optical properties of windows of regulator. EFFECT: improved functional reliability of regulator. 3 cl, 1 dwg
