FIELD: meat industry, in particular, separating meat from bones. SUBSTANCE: method involves fixing part of carcass, cutting and tearing tissue from bone. Carcass is fixed with its flesh part and spinal column is fixed for rotation about its axis. Connecting tissues are cut off from inner side of carcass along rib contour. Meat tissues are torn off from bones by applying forces directed for unbending of natural curvature of bones of skeleton chest and rib part. EFFECT: increased efficiency and simplified method. 2 dwg
