FIELD: food-processing industry. SUBSTANCE: apparatus has base 1, inductor 2 fixed on base 1 and provided with toothed portion and miltiphase winding 3, nonmagnetic screen 4 and metal cylindrical rollers 5 onto which product to be fried is placed. When connected to mains, multiphase winding 3 generates traveling magnetic field inducing swirling currents in lower part of ferromagnetic rollers 5. As a result of interaction between swirling currents and magnetic field of inductor, rollers acquire rotational motion and swirling currents heat rollers 5. Rotational motion of rollers 5 facilitates turning of product in the process of frying. EFFECT: increased efficiency and enhanced reliability in operation. 2 cl, 2 dwg
