FIELD: oil-producing industry. SUBSTANCE: cereal seeds are ground, suspended in aqueous medium, heated to 30-40 C and ferment preparation having amylolytic activity is added. Quantity of preparation is 1-5 units per 1 g of raw materials. Temperature is elevated to 88-92 C and then it is cooled to 40-50 C. Then treatment by ferment preparations having amylolitic, proteolytic and cellulase activity is carried out within 1-2 h at 40-50 C; activity of these preparations is 0.5-2.0 units, 0.1-0.5 units and 1.0-5.0 units per 1 g of raw materials, respectively. Mass is treated by calcium chloride, its quantity being 3-5 % of mass of raw materials, the process takes place at pH 7.2-7.8. Then heating to 80-85 C and cooling to 20 C take places, solid phase is precipitated and separated by centrifuging. Oil is then extracted with ethyl alcohol, the process takes place at 70-75 C.
