FIELD: butter and fats industry. SUBSTANCE: after grinding, oil yielding material is subjected to moisture and heat treatment for 2-5 minutes at moisture content of 8-14 % and temperature of 50-60 C to adjust moisture content to 14-16 % for 2-5 minutes. Material is pressed to at 2-5 MPa. The resulting oil cake is cooled and mechanically activated in the presence of aqueous solution of enzymes in amount of 1-3 % by weight of oil cake at pH of 5.0-5.5. The resulting pulp is exposed at 50-55 C for 1-3 hours. Oil phase is separated from oil cake by centrifugation followed by extraction of solid phase with water. Fermentation, phase separation and extraction processes are repeated. Enzymic mixture includes enzymic agents with cellulose activity of 2-5 unit and protease activity of 0.1-0.5 unit per 1 g of raw material. EFFECT: more efficient extraction method. 2 tbl
