FIELD: food industry.

SUBSTANCE: invention is represented by a method for production of ethyl alcohol; the method involves the germ fraction separation from the endosperm fraction, the endosperm fraction milling, mixing with water, introduction of thermostable amylolytic enzyme preparations of diluent action in an amount of 0.15-0.2 units. AS/g of reference starch and enzyme preparations of proteolytic action in an amount of 0.15-0.2 units PS/g of reference starch in the raw materials, three-stage water-and-heat fermentative treatment, cooling to 56-58°C, saccharifying the mixture to obtain saccharified wort, cooling, fermentation and brew distillation to produce ethyl alcohol; the grain raw material is represented by maize; before the stage of the germ fraction separation from the endosperm fraction one performs maize biotechnical treatment by way of maize moistening with a solution of enzyme preparations of cytolytic action and conditioning at 50-55°C during 2.5-3 hours.

EFFECT: invention allows to increase the yield of alcohol with high quality indices.
