FIELD: food industry.
SUBSTANCE: invention is related to fish processing industry. Method provides for washing and coarse grinding of pond-fish skin, following processing with salt solution, water and enzymatic agent liporizine G10x solution, processing of dry fraction screening with enzymatic agent collagenase and its washing with water, dispertion, after processing with salt solution, water and enzymatic agent liporizine G10x solution, enzymatic agent collagenase liquid fraction is separated by centrifugal process with following decantation. After that softened skin is chopped during 20 minutes, isolated soya protein Soymax is added. Ice is added in ratio skin: ice: isolated soya protein 1:0.5:0.3 and obtained mass is chopped to the mousses condition, after that fresh solution of potassium iodide 0.01% is added to the obtained collagenic emulsion in quantity 10% off the fish skin mass and maturated during 20 hours at 0-4°C.
EFFECT: proposed method allows to increase biological value of food collagenic emulsion, expand raw materials base of iodine-containing preparations, decrease length and simplify technological process of production of collagenic food emulsion out of fish skin.
