FIELD: fishing industry.
SUBSTANCE: invention relates to the fishing industry, in particular to a method for producing laminated fish fillets. A method for producing laminated fish fillet includes obtaining a multilayer semi-finished product of a laminated fish fillet by placing in a mold successively with layers of fillets-minced meat-fillets, followed by pressing and freezing. Fillets of large mainstream fish species are used as fish raw materials. For minced fish, fillets of small mainstream fish species, muscle tissue of the backbone and rib bones, cut, pieces of fillet of large mainstream fish species are used, and a structure former is introduced into it - an aqueous 1% solution of sodium zosterate polysaccharide in an amount of 5-7% of the weight of minced fish meat, mix and incubate for 5-10 minutes. Lamination is carried out in a ratio of 60-80% fish fillets and 20-40% minced fish.
EFFECT: invention allows increasing consumer properties, nutritional, biological value, functional and technological properties, such as water retention capacity, formability and rational use of minced meat from small mainstream fish, filleting waste, which increases the yield of finished high-quality products.
