FIELD: food industry; in particular, confectionery. SUBSTANCE: method involves mixing sugar powder, part of fat and other ingredients depending on product. Then mixture is ground on six-roller mill. The rest fat is introduced into mixture, and mass is kneaded and mixed thoroughly. Dehydroquercetin may be used as anti-oxidant in amount not less 0.05% from mass part of fat, and as biological additive, in amount not more 0.5% from mass part of fat. Dehydroquercetin is prepared by treating sawdust of larch wood with water. Then it is extracted and crystallized. Extraction is conducted by water solution of acetone immediately after treating sawdust with water, while crystallization is carried out from water, aqueous-alcoholic or aqueous-salt solution.
