FIELD: food industry. SUBSTANCE: gelatin is allowed to swell in water mixed with phytoadditive at 1:1 ratio. Resulting mass is agitated for 1-1.5 h at 60-65 C. Simultaneously, sugar-containing syrup is prepared which is boiled out until 78-80% of solid substances is achieved. Then, sugar syrup is mixed with carrot broth and mixture is boiled out to prepare jelly mass with 84-88% of solid substances, to which gelatin solution is added. Resulting mass with 79+-2% of solid substances is molded at 78-80 C and casings obtained are subjected to structure formation at 18-25 C. EFFECT: improved quality of confectionery. 2 ex
