FIELD: food industry. SUBSTANCE: method is based on preparing two nutrient medium flows. In the first flow lactose raw is fermented and in the second flow cereal-potato-molasses raw is cooked to a pulp and fermented in the presence of nitrogen and biologically active and mineral substances in medium. The obtained mash is distilled to alcohol. In the first flow disaccharide lactose is hydrolyzed to monosugars glucose and galactose using yeast Kluyveromyces lactis. Initial lactose concentration is 3.0-4.0% and glucose and galactose concentrations were brought about to 1.2-1.7% and that of alcohol concentration - to 2.0-2.5%; in the second flow sucrose or starch from cereal-potato-molasses raw is hydrolyzed with amylolytic enzyme preparations to monosugars glucose and fructose at initial concentration of dry substances 16-25%. Fermentation is carried out with saccharomycetes and alcohol concentration in the second flow is brought about to 10.0-13.5%. The indicated flows were mixed at ratio = (1:2)-(1:3) at stationary yeast growth phase. After flows mixing concentration of dry substances is brought about to 6.0-11.5% and additional fermentation to alcohol is carried out to concentration 7.0-11.5% followed by distillation of the obtained mash to alcohol.
