SUBSTANCE: the invention is pertaining to the field of the chemical industry, in particular, to methods(methods) of the synthesis of the oxygen-containing chemical compounds on the basis of the enzymatic or the zymotic reprocessing of the organic raw materials and may be used at production of the acyclic compositions, predominantly, the ethyl alcohol. The method includes the pretreatment of the organic carbohydrate-containing raw, its fermentation with usage of Saccharomyces cerevisiae yeast culture, agrotype XII, and distillation of the produced at that beer. The raw pre-treatment is exercised by the successive mincing and preparation of its water suspension with the simultaneous thermal treatment, thermostating and the complex fermentation. The fermentation is exercised anaerobically in the conditions of the irradiation by the IR-source at the temperature of 29-30°С within 60-72 hours. In the process of the fermentation exercise the periodic stirring by the action of theultrasonic sound. During preparation of the water suspension the thermal treatment conduct by addition of the water with the temperature of 95-100°С within 3-5 minutes, and the thermostating is exercised by addition of the water with the temperature of 50-60°С within 15-20 minutes. Usage of the invention allows to unitize the process of the ethanol production.
