FIELD: oil and fat processing. SUBSTANCE: method is carried out by treatment of fat coriander oil with the help of electrolyte, water and adsorbent. 1.0-3 % aqueous solution of oxyethylene diphosphonic acid is used as said electrolyte solution, its quantity being 3.0-5.0 % in respect with oil mass. Alkaline neutralization and adsorption purification are carried out at 50-60 C and at 70-80 C respectively, activated bleaching clay being used. Quantity of activated bleaching clay is 2 % in respect with oil mass. EFFECT: improved efficiency of the method. 6 tbl
