FIELD: biotechnology. SUBSTANCE: method resides in culturing yeast on standard nutrient medium, followed by isolating cultured yeast from culture liquid and adding citric acid in amount of 0.001-0.02 wt.-% based on dry matter content. Mixture is kept fro about 30 min under constant stirring and then dewatered. EFFECT: higher quality of yeast.
