FIELD: biotechnology. SUBSTANCE: invention provides, in particular, synthesis of lower hydroxy acids and lower polybasic acids. Into fermenter, nutrient medium with microorganism culture is placed and fermentation process is carried out. Mycelium and suspended admixtures are separated from culture liquid, after which desired product is separated in the form of salt suspension. The latter is thermally treated and transferred into isolation step followed by purification and accumulation of pure product. EFFECT: enabled transforming food acid production process into continuous one, so reducing its economical efficiency. 1 dwg
