FIELD: food industry. SUBSTANCE: invention relates to a method of processing mustard seeds for full-oily food mustard product preparing. Milled mustard seeds are treated and thioglycoside sinigrin is extracted with water at 75-90 C at phase ratio 1:6 for 30 min. After extraction phases are separated. Solid phase is washed out many times with water at the same temperature and dried by the known procedures up to moisture residual content 10%, not above. Liquid phase is filtered, evaporated and thioglycoside sinigrin solid crystals are obtained. The end product does not contain antinutrient substances - sinigrin and its degradation products. Method ensures to obtain full-oily food mustard product. EFFECT: improved method of processing. 1 tbl
