FIELD: food industry for preparation of high-protein food additive. SUBSTANCE: sinigrin thioglycoside is extracted from solid waste by water at temperature 75-90 C, at ratio of phases 1:6. Extraction duration is 30 min. After extraction, separation into phases is carried out. Solid phase is repeatedly washed with water at the same temperature and dried, while liquid phase is filtered, and boiled down for obtaining hard crystals of sinigrin thioglycoside.
