FIELD: fish industry. SUBSTANCE: preliminarily prepared octopus is aged in 7-7.5-% solution of NaCl for 4-6 h. Then processing with 3-5-% aqueous solution of sodium bicarbonate (pH = 9-10) is conducted for not less 40 min. After it, precook or sterilization is carried out, that is heating of product at temperature not lower 100 C for not less 30-40 min. EFFECT: valuable food product with high organoleptical properties; reduced losses of product at primary and heating treatment. 3 exps
