FIELD: biochemical methods. SUBSTANCE: bloodless, washed by water and disintegrated to force-meat state raw material (cock crests or umbilical funiculi) is frozen to temperature from 20 to 70 C and 2 weight parts of water are added. Resultant mixture is heated at 95-100 C for 15-25 min and precipitate is filtered off or separated on centrifuge. Newly formed precipitate is frozen to temperature from 20 to 70 C, 1.5 weight parts of water is added, and mixture is heated at 95-100 C for 15-25 min. Precipitate is separated and freezing-hot water extraction procedure is trice repeated. Extracts are combined, hyaluronic acid is precipitated by acetic acid, purified by ultra-filtration, and subjected to lyophilization drying. EFFECT: increased (3-4 times) yield of product.
