FIELD: biotechnology, polymers. SUBSTANCE: fungi of species oyster mushroom are subjected for deproteinization and demineralization to obtain chitin followed by deacetylation of the latter with 50% solution of 120-130oC at 120-130 C for 1-2 h. Obtained chitosan exhibits high level of deacetylation and high degree of polymerization. Chitosan can be used in medicine, chemical, textile, paper and food industries. Chitosan is a natural high-molecular compound. EFFECT: improved method of preparing.
