FIELD: food industry. SUBSTANCE: accelerated conversion of wine alcohol into brandy alcohol is accomplished by multiple augmentation of contact area of wine alcohol with oak wood surface. To that end, wine alcohol is introduced within oak lumber, e.g. in the form of beams, by centrifugation method, and, after appropriate ageing of alcohol-impregnated lumber in sealed sacks, resultant brandy alcohol is separated from oak lumber by centrifugal dehydration technique. Owing to that wine alcohol is brought into contact with oak wood at the capillary level, wood substances are extracted much more intensively and, therefore, alcohol conversion is considerably sped up. EFFECT: accelerated process.
