SUBSTANCE: apparatus includes cylindrical bath divided into insulated compartments filled with water mixtures of various properties and composition. Screened baskets for products are articulated on revolving unit above bath. Baskets are provided with locks and have bottom which are convex inside; angle of their inclination may be changed in horizontal plane. Apparatus is provided with setter which determines modes of dipping baskets in water freezing poly-layer glaze of preset thickness on product block. EFFECT: high productivity of apparatus and retaining initial quality of product due to freezing poly-layer glaze on product of preset thickness and composition. 2 cl, 2 dwg
