FIELD: food-processing industry, in particular, storage of food product in frozen blocks. SUBSTANCE: method involves freezing products into blocks; glazing by dipping blocks into water with further holding in cold air. Blocks are repeatedly dipped into water containing edible antiseptic used in an amount of 0.01-0.1% by weight of water, with water being alternatively in quiet state and/or it may be gas saturated in turbulent state during flowing around block of food product. Gas saturated water in turbulent state has temperature ranging from 0 to -4 C.
