FIELD: flour-milling industry, in particular, grain milling roll machines. SUBSTANCE: method involves preparing grain for milling by cleaning, moistening and conditioning of grain with following grinding to obtain flour. Grain is ground in 1, 11 and 111 systems by means of corrugated break rolls. Each corrugation of break roll has portion of width equal to 0.2 of corrugation spacing. At least one side surface of each corrugation has at least three faces. Joined faces define rib equally spaced from corrugation top along its length and/or one face is smoothly continued by other face. In the process of grinding by break rolls of 1, 11, 111 systems during separation by sieves, groats and coarse meal are extracted in an amount of 82-83% by weight of grain, which is supplied to break roll of 1 system, and 7-10% of flour. First and second grinding systems and first, second and third milling systems apply specific load of 200-300 kg/cm per day to rolls.
