FIELD: food industry.

SUBSTANCE: invention relates to production of flour for bakery, confectionary and food concentrates industry of triticale grain. Method of producing sorted flour of triticale grain includes preparation of grains for grinding, moistening and settling, further successive grinding on four tinder roll systems, selection of intermediate processing products and their successive grinding on grinding systems, at that, the triticale intermediate products of grain processing selected on the grapnel systems are enriched on three sieve system, wherein enriched processing intermediate products from first screening system are directed to grinding systems for re-grinding, and enriched products from second and third screening systems are combined and directed to successive grinding into grinding systems. Enriched grit of the first screening machine is milled on two grinding systems. Enriched grits from the second and third screening machines are milled on six grinding systems.

EFFECT: proposed method of producing flour of triticale grain allows to produce more than 70 % of prime grade flour with ash content of not more than 0,75 %.
