FIELD: food industry.
SUBSTANCE: proposed is method for producing pasta flour from triticale grain, involving cleaning the raw material, moistening said material to a moisture content of 15.5 to 16.0%, and moistening for 10 to 12 hours. The prepared triticale grain is pre-subjected to husking, removing 2 to 3% of the shells; then crushed on roller machines with the tip to tip corrugation arrangement with a rotation speed of the fast roller from 4.0 to 8.0 m/s, with a ratio of circular speeds of the fast and slow-rotating rollers from 1.5 to 3.0, with a cutting density of the rollers from 6 to 10 pcs per 1 cm, with an angle of inclination of the corrugations from 7.5 to 9.5%, followed by sorting the ground products on sieves in a screening machine and enriching on purifying machines. A technological flour production scheme consisting of 10 technological systems, namely, 5 breaking, 2 scratching and 3 purifying systems, is used.
EFFECT: invention ensures effective processing of triticale grain into pasta flour.
