FIELD: analytical methods in food industry. SUBSTANCE: sample of product is divided into two parts. The first one is diluted with distilled water and centrifuged until complete sedimentation of solid phase is attained. Sediment is separated and weighed to determine content of solid phase in the sample. Taking into account this value, the second part of sample is diluted with distilled water to specified content of solid phase. Diluted sample, after its turbidity is measured, is centrifuged until solid phase particles with specified fractional composition are settled. Turbidity of separated centrifuge is measured. From turbidity values, fractional composition of solid phase is found as criterion to estimate quality of product homogenization. EFFECT: reduced effort and usage of materials; increased productivity of analytical work.
