SUBSTANCE: nut mass contains cyclodextrins and/or their inclusive complexes in the amount of 0.001-10.0 mas.%. Interaction between nut mass components is changed under the action of cyclodextrins. Spread and form-keeping abilities of nut masses with great content of fat are improved and increased. Cyclodextrins prevent disintegration of labile components at production and storage of nut mass.
