FIELD: milk industry and biotechnology. SUBSTANCE: to prepare bifid and lactobacillus ferment, laboratory-made biomass is increased on whey with pH 5.5-5.6 as nutrient medium. Whey is obtained by decanting biomass of initial fermenting mixture of bifid bacilli. This mixture is used to prepare 1% potassium hydroxide solution used in industrial-scale ferment production. Such method ensures active reproduction of cultures and increases specific activity and vitality of cultures. When producing "bifilact", ferment prepared by above- described method is utilized. Souring of skimmed milk is conducted successively: lactobacillus ferment is added preliminarily diluted with nutrient medium used in its preparation at 1:3 ratio and then similarly diluted bifid bacillus ferment is added. Product is cooled to 10 C. EFFECT: increased titer of viable bifid and lactobacilli and improved organoleptic characteristics.
