FIELD: food-processing industry. SUBSTANCE: method involves feeding mixture of soluble coffee, tea and/or cocoa with sugar or its substitutes through window and simultaneously supplying dosed amount of liquid such as water, milk, water steam etc; moving (for instance rotating) one part relative to other part of apparatus to cause mixing of basic products in cavity and rubbing one against the other and against surfaces of movable parts of apparatus. As a result, foamy product is formed and forced out of cavity through filter. Parts of apparatus may effectuate oscillatory or reciprocal motions or combined oscillatory and reciprocal motions. Surfaces of parts engageable with components subjected to mixing operation may be provided with projections facilitating rubbing of mixture. Foamy product may be used as ready product or as semi-finished product for preparing various beverages and it is stored in cylinders under pressure, in disposable packages, or it may be pelletized. Foamy product may be also used as flavor additive for producing various foods such as confectionery, beverages etc. EFFECT: wider range of products obtained by method and apparatus and improved gustatory quality of products. 8 cl, 1 dwg
