SUBSTANCE: concentrate with low water content for beverage preparation contains from approximately 15 to approximately 40 % of total amount of water, from approximately 20 to approximately 80 % of liquid with low content of water and from approximately 5 to approximately 60 % of hard particles of coffee and/or tea. Amount of water, liquid with low water content and solids of coffee and/or tea is effective for production of concentrate with low water content for preparation of beverage with pH level from approximately 3.0 to approximately 6.0. pH level of the concentrate with low water content for beverage preparation varies less than approximately 0.5 pH units after 12 months of storage at 70 °F in a closed container. Liquid with low water content contains at least one of fructose syrup, glucose syrup, sugar syrup, lactose syrup, carbohydrate syrup, honey, agave syrup, monosaccharides, disaccharides and their combinations. Non-aqueous liquid is selected from glycerine, sugar alcohol, propylene glycol, 1,3-propanediol, ethanol, triacetin, ethyl acetate, benzyl alcohol, vegetable oil, fortified oil and isopropanol. Disclosed is a version of a concentrate with low water content for beverage preparation and a method for production thereof.
EFFECT: group of invention ensures improvement of taste of concentrate of product due to retardation of processes of deterioration of taste and formation of unpleasant odors, improved stability of aroma.
