FIELD: food industry, more particularly preparation of colorant from onion peels. SUBSTANCE: onion peels are extracted with catalyte at temperature of 69-79 C and pressure of 7.2-10.0 MPa during continuous addition of ammonium salts of carbonic acid and desired sprat. Method makes it possible to intensity process. EFFECT: more efficient preparation method.
