FIELD: food production technology. SUBSTANCE: method implies deposition by spraying of food product onto surface of cooled or frozen meat in spray of gas under pressure until impregnation is reached. For this purpose, meat is moved through at least two spraying chambers by free falling under own weight. Used as food product being sprayed is dry spice-salt mixture or spicy dressing or suspension of liquid mixture and spicy dressing. Processing plant has spraying chamber containing means for moving of meat, and nozzle device for application of food product onto surface of meat. Nozzle device has several ejector nozzles which are connected with source of compressed air and with bins filled with food product. Bins are provided with device for delivery of food product to suction passage of ejector nozzle. Application of aforesaid method and plant allows for improving taste properties of both cooled and frozen meat by spraying appropriate food product onto its surface.
