FIELD: biotechnology. SUBSTANCE: sterile liquid nutrient medium for culturing mycelium of basidial fungi is placed in vessel using asepsis technique. Sterile agar particles as well is added to 10% of total volume of nutrient medium in vessel. Homogenized mother mycelium of basidial fungi preliminarily grown on agar-containing nutrient medium is then added and cultured in depth-culture mode or on shaker at optimum growth temperature. Mycelium biomass on agar particles in liquid nutrient medium are poured into glass bottles for storage and delivery to consumer. Utilization of sterile agar particles in nutrient medium during mycelium growth promotes high yield of mycelium fungi biomass. EFFECT: improved organoleptic properties of beverage and increased yield of active substances.
