FIELD: food-production industry. SUBSTANCE: this particularly relates to meat-processing industry and can be used in production of meat pastes. According to method, Soya beans are disintegrated and mixed with water. Then, they are extracted with separation into soluble fraction and insoluble fraction. Homogeneous suspension produced in result of extraction is subjected to treatment by solution of acetic acid or citric acid at temperature of 20 C without bringing pH to isoelectric point. Suspension is then cooled and frozen. Moisture is removed from mixed fractions after thawing. Application of aforesaid method allows for enhancing nourishing value of products together with reduction of energy-input for their production. EFFECT: higher efficiency. 2 ex
