FIELD: dairy industry. SUBSTANCE: method involves preparing a homogeneous suspension from milled soybeans, extraction, separation for soluble and insoluble fractions, protein coagulation from soluble fraction by addition of CaCl2 and protein precipitation in insoluble fraction. Precipitated protein is mixed with insoluble fraction. Mixture containing 15-20% of moisture is separated and extracted. Method is used for production of dairy-protein foodstuffs. EFFECT: improved method of production.
