FIELD: biochemical methods. SUBSTANCE: method consisting in extraction of vegetable protein material containing glucone isoflavones with extracting substance having pH higher than isoelectric point of mentioned protein and ensuring solubility of protein and glucone isoflavones and bringing those isoflavones contained in extract solution into contact with effective amount at least one enzyme beta-glucosidase and enzyme esterase is distinguished by that, before glucone isoflavones are brought into contact with enzyme(s), insoluble materials are removed from extract solution and contact of glucone isoflavones with enzyme(s) is carried out at temperature, pH, and as long as to provide conversion of all glucone isoflavones into aglucone isoflavones.
