FIELD: food industry and technology. SUBSTANCE: invention claims method for separation and extraction of protein and isoflavones from soybean material containing thereof. Method involves preparing the purified extract of soybean material that interacts with strong-base anion- exchange resin based on quaternary ammonium groups. From soybean protein extract purified from isoflavones and isolated from anion-exchange resin isoflavone-free soybean protein material is extracted. After isolation of isoflavone-free soybean protein extract from anion-exchange resin isoflavones are isolated and extracted from anion-exchange resin. Isolated isoflavone glycosides and conjugated isoflavone glycosides can be converted to form of their corresponding aglycone isoflavones. Method provides the complete separation and extraction of proteins and isoflavones from soybean protein material containing thereof.
