FIELD: alcohol production. SUBSTANCE: in a method consisting freeing grain of impurities, mixing with water, heat treatment, adding enzymes and acids, and saccharification, cleaned grains are separated into floury nuclei and husk. Subsequent treatment of raw material is performed in two streams. Floury nuclei are mixed with water to moisture level 19-21 wt.%, thermally treated during extrusion operation, mixed with water, and amylolytic enzymes and acid are added in amounts providing optimal pH value for enzyme type added, after which grain material is saccharized. Simultaneously, husk is mixed with water to moisture level 21-23 wt.%, and at least 2% of alkali is added. Material is thermally treated with acid added to optimal pH value for enzyme type used. After that, cellulolytic enzymes are added and saccharification of material is carried out. The two streams are combined and fermented. EFFECT: more completely utilized non-starch polysaccharide grains, reduced consumption of enzymes and power, and increased yield of alcohol. 4 ex
