FIELD: alcohol production. SUBSTANCE: Method involves preparing batch, cooking of starch-containing raw material, saccharification thereof, separating it into solid phase (grain) and liquid phase (first wort), fermentation, separating yeast for their recycle into fermentation stage, and isolation of ethyl alcohol from mash by mashrectification, and returning distillery dregs into batch preparation stage. Invention is distinguished by adding water to separated solid phase at 1:1 ratio followed by adding cellulolytic enzyme preparations in amounts based on 12-16 units of endogluconase per 1 g of cellulose, ageing under suitable conditions, centrifugation, and combining wash water with liquid phase. EFFECT: reduced losses of fermented solid phase carbohydrates and increased yield of alcohol. 2 cl, 1 dwg, 1 tbl
