FIELD: food industry. SUBSTANCE: sample of food containing lipids is treated with extractant in filtering separation funnel. Part of liquid phase is aspirated and heated to boil for subsequently returning vapors formed at boiling into lower part of the funnel with specified velocity. Micella is separated and, after distilling off extractant, is fried of non-lipid substances. Remaining lipids are finally weighed. EFFECT: increased assessment accuracy.
