FIELD: chemical industry, more particularly preparation of food chitosan. SUBSTANCE: method comprises alternating double treatment of shells of crustacean with 4% solutions of hydrochloric acid and sodium hydroxide, washing semifinished product after each stage to neutral reaction of wash water, treatment with 50% sodium hydroxide solution at 100 C for 30 minutes followed by washing to neutral reaction of medium and treatment with liquid nitrogen under airtight conditions for 2-4 minutes.
