SUBSTANCE: method involves two-stage alternating treatment of raw with sodium hydroxide and hydrochloric acid and washing out of semiproduct after each stage with 4-6% sodium chloride solution to neutral reaction of washing water. Method can be used in crustacean shells, insects and cellular microorganisms processing. The end product has increased chitosan viscosity. EFFECT: improved quality of chitin. 1 tbl
