FIELD: food industry, medicine. SUBSTANCE: method involves precipitation of protein substances from washing out waters followed by their isolation. Washing waters at pH 5-7 are taken and 2% acetic acid solution of chitosan neutralized to pH 6.1-6.4 immediately before its addition to washing out waters is added. Ratio chitosan solution : washing out waters = 1:3. Method ensures to obtain noncoagulated protein at retained native properties that can be used for curative-prophylactic aims since it has biologically active substance - food chitosan at doses recommended for curative-prophylactic foodstuffs.
