FIELD: chemical industry. SUBSTANCE: described is method of preparing peptine by treatment of vegetable stock (green compound of lupine) with water and filtration of extracting agents for 1 hour at 70-75 C and then with 0.25-0.5% solution of oxalic acid for 1 or 2 hours at 70- 75 C at stock to acid solution weight ratio of 1:10 and aqueous solution of potassium hydroxide at pH of reaction mixture of 10.45-12.45 at 45-50 C for 30 minutes. Final product is isolated by deposition with ethanol. EFFECT: wider range of vegetable stock suitable for preparing pectin with high molecular weight. 3 ex, 1 tbl
