FIELD: food and medicinal industry. SUBSTANCE: plant raw (above ground part of tassel flower (amaranthus) herb) is extracted with 0.25% oxalic acid an aqueous solution at hydromodulus = 1:(10-15). Extraction is carried out in rotor-pulsating apparatus in gap between stator and revolving rotor. Values of rate gradient are from 1.8 x 106 to 4.6 x 106 m/s x m for 30-240 s. Extract is subjected for ultrafiltration through hollow-fibrous membrane filter (pore diameter is 10-100 kDa) under pressure 0.12 MPa. Then pectin substances are concentrated and purified from low-molecular and inorganic impurities. EFFECT: increased output, improved quality of pectin, high yield of the end product. 1 dwg, 12 ex, 1 tbl
