SUBSTANCE: method involves treating meat raw material by compact part of hydraulically monitored high-pressure stream; at first treatment stage, directing stream at an angle to raw material surface to tear off meat tissue from bone skeleton; at second treatment stage, cleaning bone skeleton from meat tissues; segmenting skeleton and bones. At all mentioned stages, hydraulic streams have different parameters. Apparatus has box with hydraulic stream generating device and meat raw material moving device. Apparatus is further provided with water suspension preparing and supplying system. Hydraulic stream generating device has nozzle for generating hydraulically monitored high-pressure stream of water suspension. Method provides intensified process of separating meat from bones.
