FIELD: food industry.

SUBSTANCE: invention relates to fish industry. One prepares raw materials, stuffs the culinary mass into the casing, moulds loafs and frosts them for the shape stabilisation. One removes the casing from the loafs and wraps them in skin canvas without scales. One portions the loafs into medallions, individually freezes the latter, glazes and moulds combined multi-layer medallions. The medallions consist of two layers where one of the layers is a fish layer while the other is made of vegetables or culinary fish mince frozen with addition of food ingredients in polymeric casing; alternatively the medallions may consist of three layers where one layer made of vegetables or the said fish mince is placed between two fish layers.

EFFECT: invention allows to manufacture a product with improved quality and enhance nutritive and biological value.
