FIELD: biotechnology. SUBSTANCE: dry preparation has a mixture of strains Lactobacillus acidophilus A-1 and H-1 as bacteria in the following ratio of components, per 1 g of the preparation: mixture of strains Lactobacillus acidophilus A-1 and H-1, 2-100 billion cells; and wt.%: gelatin, 0.5-2.5; sucrose, 5-20; fat-free dry milk, 3-5; water, 2-8; and cultural fluid residues, the balance. Method of preparing the preparation involves culturing bacteria using inoculum of strains Lactobacillus acidophilus A-1 and H-1 in hydrolysate-milk medium. Nutrient medium has 0.3-0.5% of calcium carbonate additionally. After culturing protective medium is added to cultural fluid in the following ratio of components, wt.%: gelatin, 1-3; sucrose, 8-12; fat-free dry milk, 3-5. Mixture is frozen at minus 25-30 C and then subjected for sublimation drying at minus 30 C, not above, under pressure 13-15 Pa. Obtained preparation showed high fermenting activity with respect to milk and stability at prolonged storage. Method provides preparing the required ratio of cells of different strains in fermented-milk product. Invention can be used in food industry, medicine, veterinary science and related branches.
