FIELD: confectionery industry. SUBSTANCE: method involves preparation of raw material including fine grinding of granulated sugar. Sugar powder is dosed by weighting and the following components are simultaneously mixed: sugar syrup, dry fat-free milk and water thus preparing liquid phase. Sugar powder is added in mixer. At the end of mixing, salt and coconut chips are introduced. Ingredients are taken in determined quantities. Fondant mass is mixed until its homogeneity. Coconut chips are ground before their introduction in mass. Prepared mass is formed by pressing out, and obtained ropes are cut into separate cores.
